THE VINEYARDS



The vineyards cover 7,5 hectares, 5  planted with  Sangiovese, the rest with  Merlot,  Cabernet Sauvignon and Alicante.

The training system is bi-lateral guyot, at a height of around 60 cm. from the ground. In July we thin out the bunches to contain the yield per vine to below 1 kg of grapes. 

Yield per hectar is around 50 quintali or 5.000 bottles. 

The vineyars are divided in 4 distinc plots, different for exposure and soil composition:

Il Civettaio produces award - winning organic and biodynamic red and rose' wines, typical of the Maremma under the DOC Montecucco and IGT Maremma Toscana. The Montecucco DOC are produced as "Pure Sangiovese", that is  100% Sangiovese or as a blend (Sangiovese, Cabernet, Merlot and Alicante). 

The cultivation is strictly organic and biodynamic and all the Civettaio wines are certified organic by ICEA.

The work of the soil, weed control and harvesting are done only with  mechanic means or manually. In July, there is a grape thinning to keep the yield per plant very low.  

The harvest and winemaking, done with natural methods and with a minimum intervention in the cellar, allow the production of "natural" and "clean" wines  that retain as much as possible the flavors of the grape and express faithfully the terroir they come from.

Grapes are picked manually and immediately brought to the cellar, where are selected by hand, pressed and vinified.  Fermentation takes place in stainless steel vats and/or Slavonian Oak barrels with natural methods like the use of natural yeasts, eggs white and the delayed maiolactic fermentation. Wines are not filtered.
They rest few months in the stainless steel vats  or in the wood barrels before being bottled.  

THE WINES

Hiuls – Red - Montecucco Sangiovese Doc Riserva 
Made exclusively with Sangiovese(100%), Hiuls is a well structured and balanced wine. Show a complex nose and palate with flavours of  wild berries,  mature fruits. and hints of liquirice. Though is not filtered it is clear ,with no residuals. The color is a deep ruby red with purple hues.

Il Civettaio – Red - Montecucco Sangiovese Doc                                                             Made exclusively with Sangiovese (100%). Poggio al Commessario - Red -  Montecucco Rosso Doc 
A blend di Sangiovese (65%) Merlot (15% ) Cabernet Sauvignon (15%) and Alicante (5%. Elegant and intense to the nose with notes of Mediterranean vegetation, sun and hints of liquirice. Soft, well rounded and persistent in the mouth.

Chiu'- Rose' - IGT Maremma Toscana       
A blend of 65% Sangiovese e 35% Alicante, Chiu'  is pleasant to drink, fresh  and delicate. The color is a brilliant, intense pomegranate pink.  To  the  nose, it shows  fresh aromas of strawberries and cherries, with hints of violets and cyclamens.
