




Wines and Olive Oils
Il Civettaio, in 7.5 hectars of vineyards and 4 of olive groves, all certified organic and biodynamic, produces wines of Maremma, like Montecucco DOC, Sangiovese, IGT Maremma Toscana, and Maremma extra-virgin olive oils.

Il Civettaio, born with the intent to create a wine estate that would represents faithfully its terroir, produces award - winning organic and biodynamic wines and olive oils, typical of Maremma.
Located in Civitella Paganico, in the area of the Montecucco DOC, il Civettaio's vineyards enjoys a series of elements that make their terroir unique and particularly apt to produce organic wines and extra-virgin olive oils of great quality
At
a distance of only 25km from the sea, il Civettaio has an extremely
favorful microclimate with an exceptional level of sunshine (2300 hours
a year) and a very limited amount of rain. The vineyards and olive groves are on sloped hills (average height of 150 meters on the sea level) with optimal exposure.
The
main varietal is Sangiovese, a native grape of Maremma, along with
small quantities of Cabernet Sauvignon, Merlot and Alicante.
The extra-virgin olive oil is produced from native cultivars like Correggiolo, Leccino, Moraiolo, Olivastra Seggianese e Frantoio.
The
cultivation is totally organic, ICEA certified, and is helped by the
fact that the vineyards were newly planted on land historically devoted
to pasture. The vineyards are surrounded by woods that naturally shield
them from diseases. In 2009, il Civettaio started to embrace the
biodynamic method
The ground work, weeding, grape and olive harvest are done only with mechanic means or manually.
The production and winemaking process take place solely at the property.
The extra-virgin olive oil is
produced by natural methods. The olives, picked manually, are taken
immediately to the oil mill and worked in the subsequent 12 hours
to ensure the maximum freshness and quality.
In addition to wines and olive oils, il Civettaio produces due excellent Grappas made with Sangiovese.
