Extra-Virgin Oilve Oils - Il Civettaio's Tuscan Organic Extra-Virgin Olive Oils of Maremma 






   
 

Il Civettaio produces two excellent extra-virgin olive oils, organic certified by ICEA, with olive cultivars native of the Maremma: Frantoio,  Correggiolo, Leccino, Moraiolo e Olivastra Seggianese.  

 

Civettaio Extra-Virgin Olive Oil
This Organic Olive Oil,  is a blend of the native cultivar of Maremma cultivated in the estate : Correggiolo 80%, Leccino, Moraiolo e Frantoio the remaining 20%.
The color is a clear, golden yellow. To the nose it is elegant and well balanced with rich tones of freshly cut grass and hints of mint and rosemary.
The taste is complex and powerful , with distinct vegetal tones and artichockes flavor in the end. Decisevely fruity, well balanced with a hint of bitterness.


Civettaio Monocultivar Extra-Virgin Olive Oil
This organic oilve oil is made solely with olives of  Olivastra Seggianese, the cultivar of the near Mount  Amiata. The color is a clear  golden yellow with green hues. It's  fruity just with a hint of spiceness.

 

The very high quality of Il Civettaio's Extra-Virgin Olive Oil is due to the unique location of the property, with its vicinity to the coast, his exceptional microclimate with high level of sunshine, and low level of rain, the optimal exposure and height of the olive groves.
In additiion the manual picking and the immediate cold pressing (within 12 hours from the picking) ensure that the olives are carefully handled and not bruised and that are healthy, free from mold and fungus. 
 

The cultivation, in policonic vase,  is strictly organic, certified by ICEA. Cutting takes place every two years. Civettaio's Olive Groves are divided in 3 plots planted at different times. 

 

The Olives Harvest begins at the end of October and goes well  into November. The cold pressing is done in a continous cycle.

Both Extra-Virgin  Olive Oils are unfiltered and are a faithful expression of the territory. They are excellent on salads, meat carpaccios, grilled vegetables, soups, any kind of grilled meat, and hard cheeses.  

They come in bottles of 0.5 litres - 16 ounces.
