Il Civettaio is a splendid end of eighteenth-century estate, nesting on a small hill sporting cypresses and surrounded by vineyards and olive groves.
It was love at first sight between myself Gregorio Dell'Adami de Tarczal and Il Civettaio. With coincidences – and I strongly believe in coincidences, nothing happens by chance: one of our family’s coat of arms bears an Owl (Civetta) with oak boughs… and il Civettaio which has now become its symbol.
We purchased the estate at the end of the nineties with the precise intention bringing it back to life and of producing, by preserving this small piece of Maremma to the best.
And so, with everything organic, there was the planting of the vineyard, the rediscovery of now “old-fashioned” breeds such as the Cinta Senese pigs reared wild in the wood, the improvement and revitalisation of the old olive grove and the restoration of the house to create an agro-tourism in harmony with the surrounding greenery.
The name clearly derives from the owl, which as lord of the hill can be heard hooting in the night and which like many animals and myself, adore this place.
The "civettaio grande", the main house elegantly restored and furnished with family furniture and tradition, offers apartments with forgotten flavours and sensations. The attentive restoration – was conservative and only where necessary – privileging local handicraft materials; it is still possible to admire the old Amiata chestnut wood beams, the long horizontal structural beams cut from local oaks, the earthenware floors, and fireplaces. This restoration led to the creation of 6 apartments distributed on the ground, first and second floors.
The apartments are named after the animals still populating il Civettaio, where they can be frequently encountered.
The "civettaio piccolo" houses the cellar, where the wines rest, and a small restaurant where the genuine cuisine of the territory can be enjoyed.
