Il Civettaio is the product of the passion and patience of its owner, Gregorio Dell’Adami de Tarczal, who bought it in 1998 with the goal to restore, preserve and give a new life, in the total respect of the environment, to this little piece of Maremma.
So a new, green wine estate, with the mission to produce fine organic wines and extra-virgin olive oils, is born.
Since the beginning, production is completely organic, in the total respect of the tipicity of the land, the terroir and the environment.
The management of the estate, too is intensely "green", in the belief that the environment is a common good and must be preserved.
Solar panels were installed and biomasses are used for some of the estate energy needs. Water is conserved by using subterranean water, searched and found in the property, thanks to a water diviner.
Recycled paper is used for the packaging and printed materials. Lightweight bottles are used for the wines and olive oils.
The restoration and renovation of the entire estate took 2 years and was done by salvaging as much as possible from the old estate and by using local artisanal material, traditional furniture and family antiques.
The same attention and care that went into the renovation of the old farmhouse went into the revitalizations of the preexistent olive grove and the planting of 7 hectars of vines under the consultancy of a famous enologist during the years 1999 - 2001.
The main varietal is Sangiovese, along with small quantities of Cabernet Sauvignon, Merlot and Alicante.
The strategy has been one of solid growth with a focus on producing fine wines and an eye for the environment and the tradition. The attention of the winemaker, Dell'Adami de Tarczal, on the quality of the wines and his daily work both in the vineyards and in the cellar, has paid off.

Gregorio Dell'Adami de Tarczal
Born and raised in Italy, after getting a degree in Business and an MBA at the Bocconi Universty, Gregorio follows a brilliant career as a manager in private companies. During these years, he continues to cultivate his passsion for wine, a familiy tradition for the de Tarczal, that originally Hungarian, have been Tokaji producers for centuries.
His passion for wine becomes his full time job when Gregorio decides to focus on producing fine wines, by buying and launching il Civettaio.
Meanwhile, he acquires some experience in the cellar of a prestigious winery in Montalcino and gets a Master in Wine Tecnologies at the University of Siena.
When deciding to buy ll Civettaio, Gregorio could not miss a strange coincidence. The name Civettaio, that is the place where the owls are, has a particular meaning for him as the owl is featured preminently in his family crest.
Today Gregorio, in homage to the family tradition, is combining his passion for wine and his love for the land of his ancestors by giving new life to the old wine estate in Hungary and its splendid Tokajis.
